Fruit: 100% Estate grown Sangiovese.
Harvest: Grapes were hand-picked in the early morning to maintain cool temperatures prior to fermentation. Brix 24°. Acid 0.7 grams/100ml.
Fermentation: 100% small bin fermentation at cool temperatures to ensure a rich character. Bins were hand-punched down several times per day in order to achieve optimum color extraction and intense fruit flavors.
Aging: 18 Months in French oak 500 litre puncheons.
Tasting Notes: Aging in the French oak puncheons perfectly marries lush black fruit with subtle oak overtones to create a fruit-forward well balanced wine. The wine is drinkable now and will benefit from additional bottle aging.
